Going to a pot luck and eating healthy can be challenging. Since my wife has an autoimmune disease (Hashimoto’s Thyroiditis) and can’t eat gluten (and I don’t eat it because it makes me feel bad) we can’t eat the usual cookies and brownies at the buffet. So we try to bring desserts that we can eat. These “quick & ridiculously delicious clean eating” Coconut Brownie Bites fit the bill. There are only 6 ingredients, take 15 minutes to throw together, you don’t even need to turn on your oven AND your friends will love them.
Add the ingredients to your grocery list:
- 1 cup almonds
- ¼ cup cacao powder
- ½ cup unsweetened shredded coconut
- 1 cup pitted dates (soaked for 30 minutes and drained)
- 1½ tbsp coconut oil
- 1 tbsp raw honey
